Training Description
The course aims to provide participants with the basic knowledge and principles on food product development and safe usage of various food additives. In the first part of the lecture, participants will learn the classification of food products in product development, examine the reasons for developing food products, and explore the different stages of food product development. Participants will also develop a design concept for a specific market group. In the second part of the lecture, participants will learn how to identify the food categories and food additives of the various products that will be provided in the case studies.
Objectives
At the end of the training course, the participants are expected too:
- Learn the stages of food product development
- Classify the degree of newness of a food product
- Understand why there is a need to develop new products
- Prepare a design concept for a new food product
- Understand food science considerations in product development
- Identify the food categories and food additives of the various products that will be provided in the case studies
Methodologies
The course will be conducted face-to-face through lectures,
PowerPoint presentation and workshop. Certificate of Completion will be given to participants with complete attendance and submit evaluation form.
